Today we are going to make a really yummy nourish bowl that’s super healthy and gut healing. Let’s get started.
NOURISH BOWL: Sweet Potatoes, Asparagus, Broccoli, Ginger Carrot Dressing
Bowl Ingredients:
1 Sweet Potato
1 bunch baby broccoli (broccolini)
1 bunch asparagus
Sweet Potato Marinade:
Coconut Aminos
Sea Salt
Onion & Garlic Powder
Carrot Ginger Sauce Ingredients:
Carrots
1 Shallot
Fresh Ginger
White Wine Vinegar Oil (avocado, olive or coconut)
Onion Powder & Garlic Powder
Sea Salt
Peel and Slice 1 sweet potato into 1/4 – 1/2 in. slices
Toss in:
¼ t. Sea salt
1 ½ T. Coconut Aminos,
½ t. Onion powder,
½ t. Garlic powder
Roast at 400 degree F. until soft through the middle and browning.
Steam a bunch of asparagus and broccoli
Carrot Ginger Sauce
Blend together:
2 carrots – chopped roughly
1 tsp of ginger- small knob
1 shallot
½ c. of avocado or olive oil
¼ c. of white wine vinegar
½ t. Salt Adjust accordingly – depending on size of carrots. Dilute with more oil or water, if needed.
Arrange Broccolini, Asparagus and Sweet Potatoes.
Drizzle with Carrot Ginger Sauce. Enjoy!
