3 Amazing Vegan Autoimmune Healing Salads

Do you want to heal, feel great, and thrive again? Well, you gotta eat more veggies — a lot more veggies. To help you get started, here are 3 amazing vegan salads.

RECIPES ~

1) SLAW ~ CABBAGE (red and green), CARROTS, RAISINS, SCALLIONS – (Gut Healing, Easy, Delicious)

Ingredients: Cabbage (purple and green), shredded carrots, raisins, scallions.

Dressing: Avocado oil, Vinegar (Red or White Wine or Apple Cider) or Lemon Juice (2 : 1 — oil to vinegar)

 

2) KALE (Lacinato / Dino / Kale), BUTTERNUT, APPLE SALAD – (Gut Healing, Easy, Delicious)

Ingredients: Lacinato Kale, Arugula, Butternut Squash, Apples, Scallion.

Dressing: Avocado oil, Vinegar (Red or White Wine, Apple Cider) or Lemon Juice (2 : 1 — oil to vinegar)

 

3) KALE, ORANGE, AVOCADO SALAD – (Gut Healing, Easy, Delicious)

Ingredients: Curly Kale, Shredded Broccoli Stems (or, substitute shredded asparagus), Red Onion, Oranges, Avocado.

Dressing: Avocado oil, Red or White Wine Vinegar or Lemon Juice (2 : 1 — oil to vinegar)

WAYS TO MODIFY SALADS:

  • Throw in some: lacinato kale or broccoli florets
  • Fruit— raisins, (Substitutions: dates apples, berries, oranges)
  • Always diversify what greens and cruciferous veggies you you put in the salad
  • Don’t eat the same salad every day!
  • Always Add or Include a starchy veggie to your meals— ie. a sweet potato, cubed butternut squash, turnip or rutabaga fries, roasted cauliflower.
  • Include Heavier more filling veggies: roasted or steamed beets, cukes, avocados
  • Healthy Fats: Avocados, olives and coconut and their oils.
  • Add Herbs: Fresh Mint, Parsley, Cilantro, etc.
