Vegan Autoimmune Healing “Chocolate” with Strawberry Cream Mug Cakes

Are you ready for a delicious autoimmune healing valentine’s day desert? Well, you’ve come to the right place. Let’s get started.

“Chocolate” Mug Cake Ingredients ~ 

1/4 cup avocado or coconut oil   – (Experiment with adding pumpkin puree or banana for a no-oil version)
1 tsp vanilla
2 Tbs. maple syrup
3 Tbs carob powder

Combine the avocado or coconut oil, maple syrup, carob, and vanilla in a medium pan over low heat. Stir until everything is melted and blended together. Remove from heat.

1 cup tiger nut flour 
1/4 tsp sea salt 
1/2 tsp baking soda 
3 Tbs water
1/2 tsp cinnamon

In a large bowl mix the tiger nut flour, baking soda, salt, cinnamon, and arrowroot starch together. Mix until lumps are removed.
Add the liquid chocolate mixture to the dry ingredients. Stir until thoroughly mixed.

Waterbath Cooking Method ~

Fill large casserole dish 1/3 to 1/2 full of water. Place dish in oven. Preheat oven to 325 degrees Fahrenheit.
Scoop batter equally between mugs. Place mugs into hot water bath in casserole dish (in the oven).
Bake in preheated oven up to 25 minutes for 4 mug cakes. Check for doneness, to be sure, with a toothpick (look for moist crumbs adhering).

Microwave Cooking Method ~
OR – Cook in microwave in heat proof mug for 30 – 40 seconds

Strawberry Cream Ingredients ~

¾ c. coconut cream
1 T. maple syrup – (or less, if you want it more tart). I like it more tart – 
1 ½ tsp. 2 pinches salt 2 c. fresh strawberries (1 cup pureed)
1 tsp arrowroot flour

Strawberry Cream Directions ~

Mix all ingredients together in saucepan and simmer for 5-8 minutes to thicken.
Top mug cakes with a big dollop of Strawberry Cream
Enjoy!
